    Ingredients

    • 16 evenly-sized button mushrooms
    • 1 handful of fresh flat-leaf parsley
    • 3 finely diced garlic cloves
    • Extra virgin olive oil
    • Salt and pepper to taste

    Instructions

    1. Preheat your oven to 220°C (grill setting).
    2. Trim the stems off the mushrooms (save for another dish or roast with the caps).
    3. Finely chop parsley and mix with diced garlic and 3 tablespoons of olive oil.
    4. Arrange mushroom caps on a baking sheet lined with parchment paper, hollow side facing up.
    5. Spoon the garlic-parsley-oil mixture into each mushroom, then season with salt and pepper. For extra flavor, drizzle a little more olive oil on top if desired.
    6. Roast in the oven for about 20 minutes, until the mushrooms are golden, slightly dehydrated, and roasted to perfection.
    7. Serve hot or warm with sautéed or roasted meats, or pair with salmon for a delicious side.
