Easy, Delicious Roasted Mushrooms – The Perfect Keto Side Dish for Steak or Omelette!

Ingredients
- 16 button mushrooms (preferably uniform in size and quality)
- 1 handful of fresh flat-leaf parsley
- 3 cloves of garlic, finely chopped
- Extra virgin olive oil
- Salt and pepper to taste

Instructions
- Preheat your oven to 220°C (428°F) using the grill setting.
- Trim the stems of the mushrooms (set aside for another recipe or roast alongside the caps).
- Finely chop the fresh parsley and garlic, then combine with 3 tablespoons of extra virgin olive oil.
- Arrange the mushroom caps on a baking sheet lined with parchment paper, placing them hollow side up.
- Fill each mushroom cap with the garlic, parsley, and olive oil mixture. Season with salt and pepper, and drizzle with additional olive oil if desired.
- Roast in the preheated oven for approximately 20 minutes, or until the mushrooms are golden, slightly dehydrated, and roasted on top.
- Serve hot or warm as a delicious side with sautéed or roasted meats, or pair with fish like salmon for a flavorful dish.
